Ingredients

    Cauliflower- 1.5 cup raw
    Mushroom canned and sliced- 0.5 cup
    Onion- 1 medium chopped
    Baked Potato- 2 potatoes cut into pieces (2"-4.5")
    Tomato- 1 medium cut into pieces
    Chicken Breast- bite sized pieces (optional) - 1 breast
    Coriander Leaf- 2 tbsp
    Ginger- 1tsp
    Garlic- 1tsp
    Lemon Juice- 0.5 tbsp
    Olive oil- 1 tbsp
    Pepper- 0.5 tsp
    Salt- 1tsp

Directions

1)Mix all ingredients in a microwave safe bowl. (Chicken is optional)
2)Place in the microwave and heat for 10-15 minutes until vegetables become soft.
3)You can serve it with rice or tortillas.
