Introduction

I found a Taste of Home recipe and changed it slightly from chicken to ground turkey, no added peanuts and a larger bag 24 oz. family size of stir fry veggies. The calorie count does not include the rice you serve it over. It is so filling you can be satisfied without the rice if you want. Ingredients

    1 lb. Ground 93% lean turkey
    1 T. Olive Oil
    1 pkg 24 oz Family size frozen stir fry vegetables
    6 cloves Garlic
    2 T Brown sugar
    4 tsp cornstarch
    1/4 tsp. ground ginger
    3/4 cup chicken broth
    1/3 cup reduced-sodium soy sauce
    1/4 cup chunky peanut butter
    5-6 drops of hot pepper sauce
    3 cups shredded cabbage

    Rice to serve over is optional. We used brown rice.

Directions

1. In a large skillet or wok, stir-fry the ground turkey and the minced garlic in the oil for 2-3 minutes. Add vegetables, cook 5 minutes longer or until turkey is no longer pink and vegetables are crisp tender.
2. In a small bowl, combine the brown sugar, cornstarch and ginger; stir in the broth, soy sauce, peanut butter and hot pepper sauce until blended. (you may have to warm the peanut butter in the microwave for a few seconds to get it to mix into the sauce evenly). Pour mixed sauce over the turkey and vegetable mixture.
3. Bring to a boil; cook and stir for 2 minutes or until thickened. add cabbage, cook 2 minutes longer or until crisp-tender. Serve with rice - Optional
4. Makes 5 fairly large servings.
