Ingredients

    2.5 lbs (40 oz) Pork Sirloin Tip Roast - cubed (such as Swift Kirkland Signature by Costco)
    5 c Butternut Squash - cubed
    2 c Leeks - sliced, soaked
    8 T Shallots - diceds
    2 c Celery - chopped
    10 cloves Garlic
    2 tsp Garam Masala
    1 tsp Sea Salt
    1.5 tsp Lemon Juice - fresh
    1/4 c (2 oz) Coconut Milk
    1 c Chicken Broth

Directions

Prep all ingredients.
Put all ingredients in Crock pot and mix.
Set Crock pot to cook 5-7 hours on Low.
