Ingredients

    1 sm. italian eggplant, unpeeled, thinly sliced lengthwise
    1 med. vine ripe tomato, sliced thin
    1 c. low fat cottage cheese
    1 sm. zuchini, grated
    1 c. prego heart smart mushroom sauce
    2 oz. soft goat cheese, crumbled

Directions

Spray a sm. casserole dish with Pam or alternative. Place a 1/4 c. sauce in bottom. Layer eggplant, (unpeeled and thinly sliced lengthwise) thin slices of tomato, sauce, cottage cheese, zuchini, sauce, eggplant, sauce and top with goat cheese crumbles. Cover with (vented) aluminum foil and bake for 45-55 mins. at 350 degrees.
