Ingredients

    2 tablespoons olive oil
    1 medium onion, finely chopped
    4 large garlic cloves, thinly sliced
    1 (12 oz) bottle lager beer, such as Samuel Adams
    4 pounds mussles, scrubbed
    1/2 cup chopped parsley
    Accompaniment: hot crusty bread

Directions

A little Luther Vandross and a extra bottle of the beer (sippin while cookin)
Cook onion and garlic in oil in a 5- to 6-quart heavy pot over medium heat until fragrant and slightly softened, about 3 minutes. Add beer, ¼ teaspoon salt and ¼ teaspoon black pepper and bring to a boil.

Add mussels and cook, covered, over medium-high heat until most of mussels are opened, 6 to 8 minutes. (Discard any mussels which do not open after 8 minutes.) Stir in parsley and serve with crusty bread to sop up sauce.
This serves 4 people from a happy cook!

    I have very fond memories of a small cafe in Bruge, a pot full of mussels & a nice weiss beer. Time to recreate it at home! - 7/28/12
