Ingredients

1 can coconut milk
2 chicken breasts, diced
1/2 cup chopped/diced green bell peppers
1/2 carrots
1 small onion sliced
2 Tbsp of red curry paste
2 Tbsp Oil
2 cloves garlic
1 tsp ginger paste/grated ginger root
Directions
1.Heat oil in a wok
2. Add onions, and cook for a few minutes until translucent
3. Add carrots and green peppers, and cook
4. Add garlic and ginger paste
5. Add chicken and cook until no longer pink
6. Add coconut milk, and simmer for 5 mins
Serve with rice
