Ingredients

    3 medium sweet potatoes
    2 fresh eggs
    150grams dark chocolate
    4 tablespoons demerera sugar
    2 tablespoons fructose sugar
    100g almonds
    4 tablespoons self-raising flour

Directions

Bake the sweet potatoes in their skins for 1 hour.

Melt the choclate in a bain-marie. Once melted add the sugar and mix well. Then add the eggs and mix further for a few minutes.

Scrape out the flesh from the sweet potatoes and mash with a fork or spoon. Add to the chocolate mixture along with the almonds and mix well. Add the flour and mix again.

Add a small amount of oil to a baking tray and spread with your fingers or a brush. Add the mixture and bake in an oven for 45 mins to an hour.
