Introduction

I ran this through the recipe calculator just to make sure my numbers matched hers...mine are a little higher, but I did make a couple of MINOR substitutions. Ingredients

    1/4 c brown sugar, not packed
    1/4 c reduced fat peanut butter, room temperature
    2 T Splenda
    2 T light butter (I used Land O Lakes light butter with Canola Oil)
    2 T cinnamon applesauce
    2 T egg substitute
    1/4 t vanilla extract
    1/3 c whole wheat flour
    1/2 t baking powder
    dash salt
    3/4 c old-fashioned oats

Directions

Preheat oven to 350 degrees. In a bowl, combine brown sugar, peanut butter, splenda, butter, applesauce, egg substitute, and vanilla extract. Mix thoroughly with wire whisk. Add flour, baking powder, and salt. Stir until completely mixed. Add oats and mix until they are thoroughly coated with batter. On a baking stone, spoon batter into 6 evenly spaced mounds. Using the back of a spoon, spread and flatten batter into circles about 3 1/2 inches wide. Bake for about 10 minutes, checking after 8. It took about 13 minutes in my oven. Really, really good with LOTS of peanut butter flavor!

    Very Good
    Good flavor but small for the calories. I would rather have the Hungry Girl Grab N Go Breakfast Cookie - a lot bigger and more filling w/ less calories. - 7/24/11
