    Chicken Breast, no skin, 1.25 breast, cooked and shredded
    Kroger 2 % milk 4 cheese blend, 1 cup
    Milk, nonfat, 1/3 cup
    Egg whites, 2 servings
    *Del Monte Sweet Corn Cream Style, 1 can
    corn meal, 1 C
    flour, 1 C
    sun crystals 1 pkt
    baking powder 2 tsp
    Los Nochis Green Enchilada sauce, 1 can
    1 tsp ground cumin
    1/8 tsp ground red pepper
    1 4oz can chopped green chilies drained (optional)


Preheat oven to 400. Combine 1/4 cup cheese, milk, egg white, cumin, ground red pepper, creamed corn (and chilies if using them), corn bread mixture in a large bowl, stirring until just moist. Pour mixture into a sprayed 9 x 13 baking dish.
Bake for 15 minutes until set. Pierce entire surface liberally with a fork, then pour the enchilada sauce over the top. Top with chicken, sprinkle with remaining cheese. Bake for another 15 minutes or until cheese melts. Remove from oven and let stand for 5 minutes. Makes 10 servings. Serve with low fat or fat free sour cream.
