Ingredients

1 boneless pork loin roast (3-4 lb.)
14 oz. can Bavarian style sauerkraut, rinsed and drained
1 3/4 c. chopped carrots
1 large onion, finely chopped
3 cloves garlic, finely chopped
1/2 c. unsweetened apple juice
2 t. dried parsley flakes
2 t. caraway seed
3 large tart apples, peeled and quartered
Directions
Cut roast in half; place in 5 qt. slow cooker. In small bowl, combine kraut, carrots, onion, garlic, apple juice, parsley, and caraway seed; spoon over roast. Cover and cook on low 4 hrs.
Add the apples. Cover and cook 2- 2 1/2 hrsl longer or until meat thermometer reaches 160. Remove roast; let stand 5 minutes before slicing. Serve with the kraut mixture.
Yield: 10 servings (4-5 oz. pork each)
