I had trouble finding a 'regular' cornbread recipe that is prepared the way I make it. I'm submitting this here in order to calculate calories. Great with calico beans! Ingredients

    1.25 cups cornmeal
    .75 cups of flour
    1/4 c sugar
    2 tsp baking powder
    .5 tsp salt.
    1 cup milk
    1/4 cup vegetable oil.
    1 egg

Directions

Before you do anything else, preheat your oven to 400 degrees and butter & flour a 8" x 8" or 9" x 9" glass pan. In a medium sized bowl mix together 1.25 cups cornmeal, .75 cups of flour, 1/4 c sugar, 2 tsp baking powder and .5 tsp salt. In a 2-cup measuring cup, measure out 1 cup milk and microwave it for 1 minute. Into the measuring cup on top of the milk, pour in 1/4 cup vegetable oil. Crack in 1 egg and beat it up until the yolk is all beat up. Make a well in the powdered ingredients, and pour in the wet ingredients. Stir it just enough to incorporate the ingredients. Pour it into the prepared pan and pop it in the oven for 21 minutes. Cut into 9 pieces (3 x 3)
