Ingredients

    1 tbsp coconut oil
    1 small onion chopped
    3 gloves garlic
    4 cups collard greens (prepared and roughly chopped)
    1 cup water (plus more if needed)
    1/4 tsp red pepper flakes
    1/2 medium tomato chopped
    1/4 block tofu
    1/2 cup cooked brown rice
    1 tsp Braggs Soy Seasoning (like soy sauce but better)

Directions

Saute onion in oil until soft, add chopped garlic, cook a minute more. Add 1 cup water and red pepper flakes. Add collard greens, cover and cook 15 minutes (add more water if it dries out) Then add chopped tomato, cubed tofu and brown rice and cook 5 minutes more.
