Ingredients

8 Cans Pink Salmon (Bones Removed)
6 Cups Crushed Saltine Crackers
3 Cups Finely Chopped Onion
1/2 Cup Lemon Juice
8 tsp. Texas Pete
5 Cups Liquid Eggs
5 Tbsp. Ketchup
12 Tbsp. Dried Parsley Flakes
Directions
Makes 60-3oz. Salmon Patties
Do not drain Salmon but be sure to remove bones and skin as much as possible.
Mix all ingredients well. Use a 3oz. scoop and flatten patties to about 1/2 thick onto an oiled sheet pan.
Bake at 350 degrees for the first 15 minutes. Remove and flip salmon patties over bake for an additional 15 minutes until golden brown.
