Introduction

Number of Servings: 10

Ingredients

    4 Pork Sausage Patties (or the equvilant)
    3-4 medium Red Potatoes
    1 carton of Egg Substitute
    1 10-ct. package of Low Carb or Carb Balance Tortillas (6 inch)
    5 oz. or 10 Tablespoons of Sharp Cheddar Cheese (or your choice)
    onion (any you have on hand-green works really well and gives a splash of color. As little or as much as you prefer)
    bell pepper (as little or as much as you prefer)

Directions

1. Dice the onion and bell pepper and potatoes.
2. Cook the potatoes until just tender, they will soften as you fry the sausage, using medium heat, until no longer pink. Add the onion and pepper and saute until tender.
3. Stir in egg substitute and cook until done. Mixing everything well and often.
4. Place 1 tablespoon of cheese down middle of 1 tortilla and add a 1/4 egg mixture.
5. Serve with salsa if desired.

Makes 10 tacos.
