Ingredients

    1/2 (13.25 oz.) box Dreamfield's elbow pasta
    1 Tbsp. Canola oil
    1 (2" dia.) onion, chopped
    2 cloves fresh garlic, minced
    1 lb. 92% lean ground beef
    1 c. low-fat chicken broth
    1 cup pumpkin puree
    1/4 tsp. nutmeg, ground
    1/2 tsp. cinnamon, ground
    1 tsp. Mrs. Dash, original
    1 c. Colby Jack cheese, shredded
    1/2 c. Parmesan cheese, grated

Directions

Heat oven to 325 degrees.Cook pasta according to package directions; drain. Add oil to a skillet and lightly brown onion, then add garlic. Add beef and cook until no longer pink. Add broth, pumpkin puree, and seasonings. Stir in cooked pasta. Spoon into two-4 serving casseroles. Top each with half of Colby Jack, then sprinkle each with 1/4 cup of the Parmesan cheese. Bake 15 minutes, or until cheese is melted and lightly browned.

Serve one casserole immediately, with a vegetable or a salad. Chill the other, then freeze for another day.
