Ingredients

    One 12/.5 ounce can tuna in water
    4 scallions, coarsely chopped
    1/2 cucumber - peeled, seeded, and sliced crosswise
    1/4 cup pitted kalamata olives, sliced
    1 tablespoons extra virgin olive oil
    1 tablespoon mayo
    1/2 pound zucchini, coarsely grated
    1 cup Basic Batter (separate recipe)
    vegetable oil for frying
    1 lemon, cut into wedges

Directions

In a bowl, combine the tuna, scalions, cucumber, olives, olive oil, and mayo. In another bowl, combine the zucchini with the batter.
Fill a large skillet with enough vegetable oil to reach a depth of 1 inch and heat over medium-high.
Drop 1/4 cupfuls of the zucchini mixture in the oil and fry until golden, about 3 minutes; drain.
Top with the tuna and serve with lemon wedges.
