Ingredients

    2 eggs beaten
    1 cup oil
    2 cups sugar
    2 tsp. vanilla
    2 cups grated zucchini
    2 cups flour
    1 tsp. salt
    1/2 tsp. baking powder
    1 tsp.cinnamon
    1 tsp. baking soda
    1/2 cup finely chopped walnuts

Directions

preheat oven to 325 degree's. grease 2 4x8in. loaf pans. In large bowl beat egg, sugar, vanilla, & oil until foamy. add zucchini to egg mixture. In med. bowl combine flour, salt, baking powder, cinnamon, & baking soda. gradually add flour mixture to egg mixture beat continually until well mixed. stir walnuts into the batter. bake loaves for about 1 hour or until golden brown when tooth pick inserted comes out clean.
