Ingredients

One 24 oz jar of Marinara sauce or any other tomato sauce
One roll of polenta
3-5 zucchinis (depends on size)
1.5 tables parmesan cheese (you can add more if you want)
15 oz part-skim ricotta
Directions
Makes 8 servings:
1. Prehead oven to 400 degrees. Spray casserole dish with cooking spray
2. Cut polenta into thin roungs.
3. Slice zucchini length-wise. Sprinkle with Italian Seasoning
4. In the casserole, layer polenta, zucchini (this should be a couple layers of slices thick), sauce, cheese and ricotta. Repeat until you reach the top of the casserole. make sur to end with the sauce and cheese layers.
5. Cover casserole with foil. Bake for 35 minutes. Remove oil, add more cheese to top if you want. Bake another 5-10 minutes.
