Ingredients

    1 pound lean ground beef
    1 large onion chopped
    1 can (14-1/2 oz) tomatoes, chopped and drained
    1 tsp salt
    2 cups shredded cheddar cheese (1 cup divided)
    1 cup cottage cheese
    1 egg beaten
    1 pkg tortillas (I use Mission Low Carb) torn into pieces

Directions

in a skillet cook ground beef with onion until beef is browned and onions are tender, drain. Stir in tomatos, enchilada sauce and salt. Cover and simmer about 20 minutes. Meanwhile, combine 1 cup cheddar cheese, cottage cheese and egg; mix well. Set aside. Spread one-third of the meat mixture into a greased 13"x9"x2" baking dish. Cover with half of the tortillas; spread with half of the cheese mixture. Repeat leayers with remaining ingredients, ending with the meat mixture. Bake at 350 for 30 minutes. remove from oven and sprinkle with remaining cheddar cheese. Return to oven for 3-5 minutes or until cheese is melted. let stand 5-10 minutes before serving. Yield: 8 servings

    This was just what my taste buds needed. True it's a little high in fat but I went light on lunch and enjoyed it with a salad and jello for a complete meal . - 3/17/11
