Introduction

Boiling then baking makes tender, flavorful ribs. Uses my favorite Sante Fe BBQ Sauce (separate recipe) but for a fast alternative, use bottled BBQ sauce. Ingredients

    2 Kg pork back ribs, excess fat removed, cut into pieces with 2 bones each
    1 medium onion, quartered
    1 carrot cut into 1 inch pieces
    1 celery stalk cut into 1 inch pieces
    1 tsp salt
    1 tsp black pepper corns
    2 Quarts Mom's Trip to Sante Fe Barbecue Sauce

Directions

Preheat oven to 350.

1. In a large stock pot 3/4 filled with water, add salt, carrot, onion, celery and peppercorns. Bring to a boil and add ribs. Boil for 1 hour.

2. Put ribs in a shallow pan and cover with barbecue sauce. Cover and bake for 1 hour.

3. Grill ribs on medium - low heat, using leftover sauce for dipping.

4. Serve with potatoes and salad.

Serving Size: Makes 12 servings of 2 bones with meat
