Ingredients

    1.2 lb orange sweet potato, peeled, diced and boiled until tender
    1T sesame oil or other acceptable oil (for no fat, use wine/broth/water
    2 garlic cloves, diced
    1 can water chestnuts
    2 tsp brown sugar
    2 tsp garlic chili sauce
    1 bunch spinach, stems removed and chopped
    2 tsp soy sauce
    2 T vegetable broth (or use broth from boiling sweet potatoes)

    steamed rice, to serve

Directions

Boil, steam or microwave sweet potato until tender. drain well
heat wok or deep wide skillet until hot. add the oil/broth/water/wine and stir fry the garlic and garlic-chili sauce ove rmeduim high hat for 1 minute, or until fragrant.
add the sweet potato and water chestnuts and stiir fry for 2 minutes.
reduce the heat to medium, add the brown sugar and cook for 2 minutes until the sugar has dissolved.
add the spinach, sou sauce and broth and toss until the spinach has wilted.

serve on a bed of steamed rice.

Serving Size: makes 4 vegetarian/vegan meals
