Introduction

A variation on a great recipe I found on Spark Recipes. The chicken is so tender that we usually shred it and eat it in Mama Lupe's low carb tortillas or over brown rice. Ingredients

    1 lb whole chicken breasts
    2 cans black beans, drained
    2 C salsa
    1 can fat free cream of mushroom soup
    2 T taco seasoning, or your own mix to reduce sodium
    1 C light sour cream

Directions

Mix together salsa, soup and beans in a bowl. Pour half of the mixture into a crock pot, place chicken breasts in crock pot and sprinkle with taco seasoning then cover chicken with remaining mixture. Cook on low for 8 hours then mix in sour cream.

Serving Size: Makes 6 or more servings
