Ingredients

    Bran Flax Muffins

    1 ½ cups white flour
    ¾ cup ground flax seeds
    ¾ cup oat bran cereal
    1 cup brown sugar
    2 tsp. baking soda
    1 tsp. baking powder
    ½ tsp. salt
    2 tsp. cinnamon
    *Mix together in a large bowl
    1 ½ cups finely shredded carrots
    2 pealed and shredded apples or pears
    ½ cup raisins
    1 cup chopped nuts
    *Stir into the dry mixture, if you don’t want nuts you can add extra raisins or cranberries.
    ¾ cup moil
    1 extra large egg
    1 tsp. vanilla
    *Combine liquid ingredients in a small bowl, add to dry ingredients. Stir just until moist.
    Bake at 350o for 20 minutes.

    Very Good
    I made these for breakfast throughout the week but had one for a night snack tonight when I made them. They are awesome!! I will make these again. Next time I might cut the brown sugar in half and use splenda for the other half. I made the recipe the way it is listed this time. - 7/23/10
