Ingredients

1 LB Extra Lean Ground Beef
2 TBS Reduced Sodium Soy Sauce
2 tsp Fish Sauce
The Juice Of 1 Lime
1 TBS Packed Brown Sugar
2 tsp Freshly Grated Ginger
2 Gloves Of Garlic Finely Minced
2 tsp Sambal Oelek
1 Large Carrot, Grated
Half Of A Cucumber, Peeled And Cut Into Thin Lengths
1 Bunch Of Romain Lettuce Hearts, Shredded
Half Of A Thinly Sliced Onion (Optional)
1 Cup Finely Chopped Cilantro
12 Large Rice Papers
Directions
Brown the beef in a pan. Rinse the beef in a colander under hot water to remove excess fat.
Finely chop the beef in a food processor.
Add the brown sugar, soy sauce, fish sauce, ginger, garlic and Sambal Oelek. Stir to combine and set aside.
Prep the vegetables.
Fill the sink with warm water, working one at a time soak a sheet of rice paper and let "sit" flat on your counter. Divide the meat and vegetables evenly to fill 12 papers. Fold the ends of the rice over each side and carefully roll the rice paper away from you, like you would a burrito.
Continue until all have been made.
You can add chopped peanuts and other vegetables that you would like. You can also make a dipping sauce.
Serving Size: Serves 4 @ 3 Rolls Per Serving.
