Introduction

It is a saucy (and tasty!) chicken tikka masala.
Many of these ingredients can be substituted for healthier alternatives.

It is a saucy (and tasty!) chicken tikka masala.

Ingredients

    MARINADE INGREDIENTS:

    1 cup yogurt

    1.5 Tablespoon each, of the following:
    cumin powder, chili powder, garam masala

    a pinch of turmeric

    salt (optional in marinade)

    2 tablespoons lemon juice

    Other ingredients:


    1 Tablespoon (each) of the following:

    cumin powder, chili powder, channa masala (optional), garam masala

    a pinch of turmeric

    salt (to taste)

    4 tablespoons lemon juice
    --


    3 Chicken Breast, no skin (I have only used 1, because that's all I had. but, I recommend using 3 BREASTS)

    1 cup, fluid Heavy Whipping Cream

    1 cup Coconut Milk (OPTIONAL ingredient. coconut milk has a lot of saturated fat. this is just for added flavor, and is not essential.)

    2 cup 99% fat free chicken stalk

    3 oz. of no salt added tomato paste

    3 tbsp Olive Oil

    3 tsp Margarine, soft, (optional ingredient. I do not miss the flavor of the margarine/butter if I don't have any)

    1/2 cup chopped Onions

    2 tbsp garlic

    1 tablespoon chunk of ginger (optional.)

Directions

to make the Marinade:
mix all of the ingredients listed under "marinade" in the ingredients section in a container.
Add cubed chicken breasts to the mixture and marinate for 4-6 hours.

In a pot:
1) add olive oil and margarine to the pot.

2) add onions, garlic, ginger cumin powder, chili powder, garam masala, turmeric. Let the spices and onions and spices cook for two minutes.

3) add tomato paste, chicken stalk, heavy whipping cream, coconut milk. Stir until even, and let simmer for 20 minutes.

4) Meanwhile, in a separate pan, cook the marinated chicken. try to keep only a little marinade in the pan, and discard the rest.

5) use a slotted spoon to add the chicken pieces to the sauce in the pot.

6) stir, and let simmer for an additional 5 minutes.

7) add salt and lemon juice to taste.

serve with a hot bed of rice, or bread.
