Introduction

My grandma used to make this for me when I was little. One of the only ways I would eat veggies at 5-7 years old. LOL! I've modified it to make it a little more diet friendly since my wonderful grandma used to use about a pound of butter. LOL!

This dish can also be made with just broccoli or just cauliflower, but I like the combination of the two.

Number of Servings: 4

Ingredients

    1 cup broccoli
    1 cup cauliflower
    2-3 slices of Kraft American Cheese (or to taste. I add enough to lightly cover the top of the veggies)
    10-15 crushed Ritz crackers
    1 Tbs butter (optional)

Directions

Par cook the broccoli and cauliflower until just tender. I normally sautee the veggies in a non-fat cooking spray for about 5-10 minutes. Once tender, place veggies in small casserole dish. Top with cheese and crackers. Crumble butter over the crust, if desired - it makes for a nice golden crust but it tastes just fine without it :)

Bake in a 400* oven for 10-15 minutes, until crust is golden and crispy and the cheese is melted through.
