Ingredients

1 tbsp. each cornstarch, low sodium soy sauce
1/2 tbsp. sesame oil
1 lb boneless, skinless chicken breast, cut into 1/2
inch pieces
1 1/2 tsp. canola oil
1 small red onion, diced
1 tbsp. minced fresh ginger
2 cups sugar snap peas trimmed, strings removed
1 to 2 small mangos peeled, pitted and diced
1 tbsp. Asian chili garlic sauce
Black pepper to taste
Directions
In a small bowl, stir together corn starch, soy sauce and
sesame oil. Add chicken; mix well. Let stand 10 minutes.
In wok or large skillet, heat canola oil over high. Add onion and ginger. Cook until onion is soft about 2 minutes. Add
sugar snap peas; stir fry 1 minute using spatula to keep
vegetables from sticking. Add chicken and its marinade; stir-fry until meat begins to brown about 2 minutes. Add mango, chili garlic sauc and pepper. Stir fry until chicken is cooked through and mango has softened, 2 - 3 minutes.
