Ingredients

    1 can red or pink salmon
    2 med potatoes
    1 med onion
    2 frozen pie crusts

Directions

Preheat oven to 425 degrees.

Wash potatoes, dice into medium sized pieces and boil until soft.

While potatoes are boiling, dice onion into small pieces.
Then, take salmon out of can, drain juice into a cup or bowl,and remove any bones. (A small amount of the juice will be used to flavor the mixture.)

Combine cooked potato pieces, salmon and onions, add some of the juice to taste.

Line pie pan with one of the pie crusts. Fill with salmon mixture. Cover with second pie crust, and make scalloped edges. Put small ventilation slices in crust.

Cover edges of pie crust with tinfoil, cook until lightly golden.

Remove tin foil, continue cooking until entire crust is light brown, as you like.

Let cool. Enjoy
