Chill 1 400ml tin evaporated milk (fat-free or low-fat) in the fridge for at least 24 hours.
Make up one packet sugar-free jelly with only 300ml hot water (instead of 600ml).
Refrigerate until it just begins to set--should still be runny, the consistency of egg white.
Pour chilled evaporated milk into food processor or mixer, whip until well risen (soft peaks), then slowly pour in the runny jelly while continuing to whip.
Pour into a large gelatine mould or individual portions. Chill in fridge until set.
