Introduction

Ingredients

    5 large eggs, beaten
    2 cups of shredded cheese, Mexican blend
    .25 cup of Feta cheese
    2 cloves of garlic, chopped
    1 onion, chopped
    3 cups of fresh, chopped spinach
    4 oz. of shrimp, casings removed and deveined

Directions

1. Preheat oven to 350 degrees F. Lightly grease a 9" pie pan. I used Pam.
2. Heat oil in a large skillet over medium-high heat. Add chopped onions and garlic and cook until the onions are soft. Stir in the spinach and continue cooking until excess moisture has evaporated. Stir in shrimp and cook, but do not over cook the shrimp as they will continue to cook in the oven.
3. In a large bowl, combine the eggs and cheeses. Add the spinach, onion, and shrimp mixture to the eggs and cheese. Stir it all together. Poor or scoop the mixture into the pie pan.
4. Bake in the oven until the eggs have set or about 30 minutes. Remove from the oven and let it cool for about 10 minutes. The serving size is 4, if you going to use it as a main dish. It will serve 6 if used as a side dish. Enjoy low carb fans.
