Introduction

Spicy (or light) Vietnamese Beef Rice Noodle Soup which easily converts to vegetarian tofu style or with your favorite meats with a relatively similar protein and calorie count. This nutritional mix is made with half pork and beef slow cooked with onion, garlic, and pepper seasonings. Spice it up as hot as you like after it's made with fish sauce, hoisin sauce, and sriracha sauce to taste. Ingredients

    1 low-salt bullion cube (beef, chicken, or veggie)
    4 cups water
    50 grams chinese rice noodles
    1.5 oz pork tenderloin (pre-cooked, slow roasted)
    1.5 oz beef roast (pre-cooked, slow roasted)

    1/2 cup fresh bean sprouts
    1/5 cup shredded red cabbage
    3 T cilantro, chopped

    1 wedge of Lime or juice of half Key Lime
    1/2 t fish sauce
    1 T hoisin sauce
    1(-2) tsp sriracha hot sauce

Directions

Bring bullion and water to boil. Add rice noodles and meat. Add sprouts and cabbage and take off burner as soon as it's hot. Add lime and three sauces to flavor in bowl and enjoy!

Serving Size: Makes One 5-cup bowl of soup (Yum!) . . . a huge meal!
