Ingredients

    1 large head red cabbage
    1 medium red onion
    1 medium golden delicious apple
    2 tbsp red wine vinegar
    4 tbsp cold-pressed sesame oil
    4 oz creme fraiche OR coconut milk (optional)
    1/4 tsp sea salt
    white pepper (optional)

Directions

Shred cabbage and add salt. Cover in boiling water with a lid, let sit for one hour and drain.

Chop onion and apple. Mix with cabbage. Add oil, vinegar, and any creamy addition and/or pepper.

Tastes better if it sits at least a few hours.

Serving Size: Makes one cabbage worth of slaw
