Delicious way to use leftover corned beef. My daughter made this for us day after St Patricks day with fried eggs and rye toast. Delicious way to use leftover corned beef. My daughter made this for us day after St Patricks day with fried eggs and rye toast.

Ingredients

    4 oz corned beef brisket fat removed
    2 red potatoes boiled skins removed
    1 cup chopped onion raw

Directions

Throw all ingredients in a food processor or chop finely. Spray frying pan with cooking spray and cook intul browned, flip over and cook until browned on the other side. Serve with eggs if desired.

    I add any leftover veggies from my corned beef meal -- cabbage, carrots, peppers, in addition to the onions and potatoes. I use the little new potatoes and the just need to be scrubbed, but don't require peeling. Delicious recipe! - 2/11/19
