Have been making this for years and still love it. Sometimes I add chopped red, yellow, orange and green bell peppers for more color and flavor. - 1/10/11

  • I add any leftover veggies from my corned beef meal -- cabbage, carrots, peppers, in addition to the onions and potatoes. I use the little new potatoes and the just need to be scrubbed, but don't require peeling. Delicious recipe! - 2/11/19
