Ingredients

    20 ounces chicken breast, skinless; cut in strips
    1/4 c onions, chopped
    3 lg broccoli crowns; cut into pieces
    3/4 c salted, dry roasted cashews
    3 T soy sauce
    2 T water; divided
    3/4 c. Full Circle Organic Chicken Broth - low sodium
    3 T Canola Oil
    3 T Corn Starch; divided
    1/2 tsp crushed red pepper flakes
    1 tsp ground ginger
    dash of garlic powder

    3 cups Uncle Ben's Instant Brown Rice, prepared

Directions

Marinate chicken 1/2 hour in 1 T. oil, 1 1/2 T. soy sauce, 1 T. water, and 1 T corn starch.

Meantime, mix chicken broth,
1 1/2T. soy sauce, 1 T water, ginger and 2 T. corn starch; set aside.

In wok, cook chicken and hot peppers until no longer pink; remove.
In wok, cook broccoli and 1/2 of the chicken broth mixture. Cook unitl tender.
Add chicken, cashews and dash of garlic. Add the remaining chicken broth mixture.

Serve over brown rice.
