    1 lb of skinless boneless chicken breast
    1/4 cup of grated parmesan cheese
    1/2 cup of "Heart Smart" bisquick (mix only)
    1/2 cup of panko breadcrumbs
    1 large egg
    lowfat spray margarine
    nonstick cooking spray
    1/4 cup of water
    salt and pepper to taste


Preheat oven to 350. In a small bowl, combine panko breadcrumbs, parmesan cheese, and salt and pepper. In another bowl, combine water and egg. Spray baking pan with nonstick cooking spray. Dip chicken in egg wash.Let the excess drip off and then roll in bisquick. Next roll chicken in bread crumb mix. Place chicken in baking pan and spray both sides with the margarine or butter spray. Put in the oven for 30- 40 mins. Turn occasionally to let brown on each side and to prevent sticking.

    Great! He didn't even put hot sauce on it . Next time, I'll turn the temp up to 375. I also used Mrs. Dash instead of salt. - 4/23/12
