Introduction

A delicious blend of hearty vegetables and ground beef in a broth of taco and ranch seasoning A delicious blend of hearty vegetables and ground beef in a broth of taco and ranch seasoning
Number of Servings: 8

Ingredients

1 can whole kernel corn, drained
1 can ranch style beans (or pinto beans)
2 cans Rotel drained (or not if you prefer heat)
    1 lb lean ground beef
    1 med onion, chopped
    2 cups water
    1 packet of taco seasoning
1 packet of Hidden Valley ranch seasoning

Directions

In soup pot, brown ground beef on medium-high heat, add onions to saute until soft and clear. Add all other ingredients. Bring to a boil and then turn heat to medium. Simmer for at least 15 minutes. The longer, the better! Enjoy with a dollop of sour cream, cheese, and some tortilla chips or cornbread!

You can change up the recipe by adding different veggies, as you choose. I often use two cans of beans and 1 can of rotel. Quick, easy, and great on a cold evening!
