Introduction

Ingredients

1 cup low fat cottage cheese
1 tbsp vanilla extract
3 tbsp Splenda
12 oz cream cheese, softened
1 cup egg substitute
1 pkg sugar free shortbread cookies
5 tbsp butter
Strawberries or cherries to top as desired
Directions
1. Preheat oven to 350.
2. Put cookies in a food processor or blender until it resembles fine crumbs.
3. Melt butter and combine in a 9 inch pie plate until moistened.
4. Press crust mixture all around pie plate.
5. Spoon cottage cheese into blender and blend until smooth. Add vanilla and Splenda and blend well.
6. Add cream cheese and blend again. Gradually add egg substitute and continue to blend until smooth.
7. Pour cheese filling into crust and bake until set, about 35-40 minutes.
8. Remove from oven and cool for 15 minutes. Then cover and refrigerate until chilled.
9. Top with desired topping.
Serving Size: Makes 8 pie slices
