Ingredients

Egg substitute, liquid (Egg Beaters), 1 quart carton
Cheese - Kroger 2% milk Sharp Cheddar, 1.5 cup
Shiitake Mushrooms, 1 cup pieces
Chopped Yellow Onion, 150 gram(s) or 1 cup
Spice World Minced Garlic, 10 gram(s) or 2 tsp
Salt, 1 tsp
Pepper, black, 1 tsp
Thyme, ground, 1 tbsp
Spinach, frozen, 1 package (10 oz) yields
Horizon Organic 2% Milk, 2.5 cup
Nonstick butter spray
Directions
Preheat oven to 375.
Saute onion and garlic.
Microwave spinach until thawed and squeeze out excess liquid.
Combine Egg Beaters with Milk and spices and whip until frothy.
Add in all other ingredients and mix well.
Spray either one 12-13" skillet or two 9" pans with nonstick butter spray.
Pour egg mixture into sprayed pan(s) and cook approximately 45 minutes or until done.
Serving Size: Makes 20 2 inch pieces
