Ingredients

    1 1/2 c Natural Smooth Peanut Butter
    1/2 c Vegan Becel margarine
    3/4 c Granulated Sugar
    2/3 c Packed Brown Sugar
    2 Eggs
    1 1/2 tsp Vanilla Extract (not immitation)
    1 c Large Flake Oats
    1/2 c White Flour
    1/4 c Whole Wheat Flour
    1/2 tsp Baking Soda

Directions

-Heat oven to 350F
-Beat peanut butter and margarine in large bowl with mixer until creamy. Add sugars and beat until light and fluffy. Blend in eggs and vanilla.
-In separate bowl, mix last 4 ingredients together and add to peanut butter mixture: beat until just blended.
-Drop teaspoonfuls, 1 inch apart, on baking sheet.
-Bake 10-12 minutes or until centres are set. Cool 3 min on baking sheet, remove to wire racks, and cool completely.
-Makes about 43 cookies (1 serving = 1 cookie = 26g)
