Ingredients

Onions, raw, 1 slice, large (1/4" thick) (remove)
Mushrooms, fresh, 2 cup, pieces or slices (remove)
Chicken Breast, no skin, 12 ounces (remove)
Olive Oil, 3 tbsp (remove)
Red Ripe Tomatoes, 1 medium whole (2-3/5" dia) (remove)
Salt, 1 tbsp (remove)
*Potato, raw, 1 medium (2-1/4" to 3-1/4" dia.) (remove)
Directions
Add olive oil to skillet and heat on high
Salt and pepper chicken breast
Add to skillet braising about 5-6 minute until browning begins. remove set aside
Add all other ingredients and cook for about 7-8 minutes sauteing vegtables and potatoes
add a 1/3 cup of water or low sodium /low fat chicken stock return chicken to pan mixing ingredents.
Place pan in 350 degree oven for 20-25 mins.
remove and plate, serve warm with a nice salad
