Ingredients
-
½ c brown sugar
¾ c Agave nectar
11/2 c peanut butter (creamy or chunky)
1 tsp vanilla
1 c oats (quick or regular)
1.25 c crisp brown rice (or rice krispies or cocoa crispies)
½ c raisins
½ c sunflower seeds
½ c slivered almonds
½ c pumpkin seeds
3/4 c soy nuts
1/4 c pecan pieces
2 Tbsp sesame seeds
4 Tbsp flaxseed
½ c dark chocolate chips ( or more)
Directions
Combine dry ingredients in a bowl and set aside. In a large saucepan bring sugar and agave to a boil (only takes a minute or two). Remove from heat. Stir in peanut butter and vanilla. Add the dry ingredients. (Wait until is somewhat cool befor adding the chocolate chips) Spread into a jellyroll pan (lined with parchment paper) and cool. Cut into bars. (pizza cutter works best)
Fruity version:
Omit chocolate chips and soy nuts. Add 1 c diced dried mixed fruit instead.
Notes:
You can use less nectar and sugar; it will turn out more like chunks of granola rather than bars but it is still good. (The sugar/syrup is the “glue” that holds it together.)
Serving Size: Makes 26 bars
