Ingredients

    ~ 3 TB Veg. or Canola Oil
    ~ 1.5 LRG onion, diced
    ~ 1 TB garlic powder or fresh minced garlic
    ~ 1 TB minced gingerroot
    ~ 2 TB tomato paste
    ~ APPRX 2lbs of lean ground beef
    ~ APPRX 4 large yukon gold potatoes, diced
    ~ 1 x 28oz can of diced tomatoes
    ~ 2 TB soy sauce

Directions

1. In large dutch oven, brown onions in oil, apprx. 12 mins.
2. Add garlic & ginger, cook for 3 mins. Add curry & tomato paste, cook, stirring for 2 mins. Add beef and cook until browned (breaking up with spoon). Add potatoes & carrots, cook for 2 mins.
3. Add tomatoes, soy sauce & 2 cups of water, bring to boil, then reduce heat & simmer until potatoes are tender (25-40 mins).

Serving Size: Makes apprx. 12 x 1 cup servings
