Ingredients

    1 lb very lean ground beef
    1/2 cup chopped onion
    16 oz mild or medium picante or salsa sauce
    1 cup cottage cheese
    4 1/2 oz Monterrey Jack cheese, shredded
    2 Tbs taco seasoning mix (1 pkg)
    1 1/2 cup tomato sauce
    3 eggs, beaten
    8 corn tortillas

Directions

Brown the meat; add the taco seasoning mix, onion, tomato sauce and salsa.
In a bowl, combine the eggs and cottage cheese.
Layer in a 9X13 pan: 1/2 the meat mixture, 4 tortillas cut to make a single layer covering the meat, all the egg mixture, 4 more tortillas, the other 1/2 of the meat mixture.
Top with cheese.
Bake at 350 for 20-25 minutes

Serving Size: Makes 6 large servings or 8 regular servings
