Ingredients

1 1/2 cups white flour
1 cup whole wheat or oat flour
1 cup sugar
3 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
6 egg whites
3/4 cup applesauce
1/2 cups oil
1 tsp vanilla extract
2 cups grated carrot
1 medium apple, grated
1 cup crushed pineapple, drained
1/2 cup unsweetened coconut
1/2 cup raisins
1/2 cup almonds
Directions
Preheat oven to 350.
Mix first 6 ingredients in medium bowl.
In separate bowl, mix egg whites, applesauce, oil, and vanilla. Incorporate remaining ingredients. Mix until just combined-- do not over mix.
Spoor into muffin tins-- 3/4 full for well rounded muffins.
Bake at 350 for 20-25 minutes or until toothpick inserted in muffin comes out clean. Remove to wire rack and let cool for 5 minutes before removing from pan. Cool thoroughly. Can be stored in an airtight container on the counter for up to 2 days, or in the fridge for 1 week.
