Introduction

A quick way to prepare potato salad but eliminating peeling and boiling the potatoes. Less prep time and less mess. For added flavor you can add a cup of diced ham or 4 slices cooked 1/2 inch pieces of bacon (optional). A quick way to prepare potato salad but eliminating peeling and boiling the potatoes. Ingredients

    3 cans of sliced potatoes, drained
    1 cup chopped sweet onion
    1/2 cup bell pepper (green, red, yellow or mixture)
    1 1/2 tbsp. yellow mustard
    1 cup Kraft Miracle Whip Light Dresing


Directions

Drain sliced potatoes in a colindar using cold water. Let potatoes dry. In a bowl, add the next four ingredients and mix thoroughly. When potatoes are dry cut them into pieces and add them to the mixture. Fold in gently. Cover and refrigerate 4 hours. Note: You may garnish the top of mixture with sliced bell pepper rings.
