Introduction

The basic recipe came from my sister in laws mother in England. I've added 3 cheeses for added flavor. Very thick. Would even be good with 3 cups of stock instead of two. Ingredients

    8 Potatoes
    3 Celery stalks, large
    3 Carrots, medium
    1 parsnip
    3 Leaks
    1 Onion, large
    1 Garlic clove (my addition)
    1 Campbell's vegetable broth box
    .5 tsp salt and pepper each
    1 Tbsp olive oil

Directions

Either throw it all in pot and blend after cooked or fry everything except the potatoes before hand in a bit of olive oil, then add potatoes and stock. Cook and blend with hand blender. Add salt and pepper and cheeses opt (cheddar/cheesewiz/parmesan).
Serving Size: Makes 9 one cup servings, very filling, but in my house everyone had about 1.5 cup serving.
