Introduction

I like this by itself as a side dish, or over brown/white rice. It's a quick and easy side dish and when I served it to my company she was very impressed! Be sure to try it before deciding to season it. It tastes better to me without seasoning. I like this by itself as a side dish, or over brown/white rice. Ingredients

1/4 C chopped onion (I use purple onion)
    1/2 C sliced celery
    1.5 C sliced cabbage
    1/2 tsp. coarsely chopped garlic
    1 C broccoli florets
1/2 +/- C of low sodium chicken broth

Directions

Spray a cast iron skillet with 3 quick shots of cooking spray and heat on low while preparing the vegetables.
chop and slice vegetables
When skillet is about medium hot and saute for 1-2 minutes until cabbage softens, add onion and saute for another minute, add garlic and continue to saute until onion starts to become clear, add broccoli and and stir until all sides are coated with liquids from the first ingredients, pour in about 1/2 the broth, cover until the broth is cooked away, then add the other half of the broth and continue to cook uncovered another few minutes stirring so as not to burn the vegetables. When liquid is cooked out turn off heat and serve.

used red cabbage, cooking onion, had no garlic so sprinkled in some garlic salt. Will try again with real garlic so it won't be so salty next time! - 11/14/11
