Ingredients
-
16 oz can Phillips Wild Caught Crabmeat (lump will do as well)
4 to 5 ozs shrimp, peeled and deveined,
2 ozs red & yellow bell pepper (more or less optional)
1 large egg, beaten
5 saltine crackers, finely crushed or 1 slice of bread torn into pieces
4 tbsps 1/2 & 1/2 (reg or fat free)
1/4 cup oil (olive or canola)
2 tbsps Mayo (not Miracle Whip)
2 tbsp Old Bay Seafood seasoning
Directions
These ingredient can be made the night prior to cooking
In small bowl add crushed crackers or torn bread along with 1/2 & 1/2, mix well and let sit for 10 minutes
In larger bowl, dump crabmeat from can and pick through to make sure there is no bones, set aside
In small bowl add beaten egg, mayo mix all ingredients and set aside
In small skillet, heat 1 tbsp of oil on low/medium heat, add yellow/red peppers, sautee, and add shrimp...cook until white in color (do not over cook, shrimp will become chewy)
Remove peppers and shrimp from heat and cool...chop up shrimp and add to bowl with crabmeat....in same bowl add cracker mixture and mix well....next, add two tbsps of corn meal also mix in well....cover and sit in refrigerate for one (1) hour
In medium skillet, cover bottom of pan with 1/4 cup of oil (be careful not to use more than the amount recommended you do not want to deep fry only pan fry.......
Cook 4 patties at a time......you can make them large or small......
I brown the patties on each side for 10 minutes and after all are browned, I them stick in oven for 15 minutes to finish cooking.....
I can usually get 10/3 oz patties or 4/7.5 oz patties
