Ingredients

    1 pound of lamb, cubed
    1/2 cup flour
    1 cup leeks (chopped)
    1 bulb fennel (chopped)
    4 small potatoes (red or pale gold)
    2 handfuls of baby carrots
    1 cup red wine
    Chicken Bullion
    4 cups water
    1 can diced tomatoes
    1 sprig of sage (or 1 tsp)
    1 tbsp of black pepper

Directions

Coat the lamb with 1/4 cup of the flour, and saute in a large pot until browned. Remove and set aside. Chop and add the leeks and fennel, saute until slightly soft. Deglaze pan with the red wine, then add the remaining flour to the leek mixture and stir in. Add the lamb back to the pot, along with the remaining ingredients. Stir together and let simmer for an hour or longer. Serves 5.
