Ingredients

    zucchini
    tomato
    onion
    garlic
    cheese
    flour
    egg
    spices(fresh basil!, mrs.dash, etc)

Directions

shred zucchini. dice other veggies & cheese
mix salt, pepper, zucchini in colander- set aside.
cook onions & garlic first
mix flour, eggs, parmesan & spices for batter while they soften
add zucchini & tomato to pan
remove from heat & let cool
mix veggies & cheese with batter
spoon into pan, spread thin.
flip, & enjoy!
